My Hydroponic Onion

Olga Arseniev

Back in March, I bought a couple of delicious yellow onions grown in Mexico. One started sprouting green stalks before I had a chance to cook with it. It was a lively onion, so I named it Ollie and put it into a water-filled glass. It's been on my kitchen counter ever since and appears to be quite happy. I harvest the stalks periodically. The flavor is terrific – much stronger than green onions. It's also easy to chop and use as garnish.

Ollie's light source is late afternoon sunlight as well as kitchen LED light. I add water to the glass occasionally. Some say to use distilled water, but I'm currently using tap water.

Clearly, I've got a lot to learn about this process, but I'm impressed with how easy it is to grow onion stalks without soil. I'm not sure how much longer Ollie will provide the tasty, little harvest, but I'm grateful each time it happens.

Here's more information on raising hydroponic onions.

Ever since Ollie's been in this glass, I've cut the stalks periodically (about four times now).

Ollie's latest production – which represents less than 2 weeks of growth. I'll likely cut the stalks again soon.
